Creamy Salmon Soup

This is a beautiful, quick and easy meal!


1 cup diced avocado

¼ cup chopped fresh dill

2 cups chicken bone broth

250g (9 ounces) fresh skinless, boneless salmon fillet, diced into 1cm (½ inch) chunks

2 cups heavy cream

Salt and pepper to taste


Distribute the diced avocado between 4 soup bowls and sprinkle with fresh dill.

Bring the broth to a simmer and add the salmon chunks.

Simmer gently for about a minute to cook the fish.

Add cream and warm through gently.

Season with salt and pepper.

Ladle the soup into the bowls and distribute the salmon chunks evenly.
